Masala Omelette
My uncle made this omelette for me when I visited India. I've been trying to recreate it ever since.

We recently had a friend over lunch. I made Indian food, but not like you’d find in a restaurant. This was home food: something my family would make for themselves or for when friends drop by.
I love home food. I love being hit by the smell of frying bacon and eggs when I walk by someone’s house on a weekend morning. I love peeking in my friends’ pantries (usually with their permission). When I visited my parents, I’d open the fridge and peer in all the Tupperware containers and then grab a spoon and gobble up their leftovers, cold.
I shared Claire Robertson’s essential lasagna recipe in this post because it’s one of her family’s favorites. This made me want to share a home food recipe with you.
This is my family’s “recipe” for masala omelettes. My version started with a recipe from Made In India: Recipes from an Indian Family Kitchen by Meera Sodha. Her omelette was delicious but it didn’t taste like my family’s so I did a little tweaking and got input from my cousin in Pune. (Thank you, Anjali.)
